This is from a friend. I made it by hand the first time and didn't like it. Put it in the bread machine on the dough setting and loved it!
3 1/2 c. bread flour (King Arthur recommended)
2 tsp. sugar
1 tsp. salt
1 1/2 tsp. active dry yeast
1 1/4 c. luke warm water
Oil
Place ingredients in bread machine according to manufacturer's instructions and put on dough setting.
When done, with a roller, roll out all the air in a forward and backward motion so you have a stretched oval shaped piece of flat dough. When done rolling, grab one end and roll it until the whole piece of dough is rolled up.
Seal both ends of dough. Place on a greased pan (grease with butter) and with a brush gently cover with the oil, let rise with a damp cloth for 30 minutes. After 20 minutes preheat oven to 350 degrees. Mix the water and egg white, right before you put it into the oven, brush the dough with a little bit of the glaze, make three slices in the dough, and then place into the oven.
Glaze for French Bread
1 egg white
1 Tbl. water
When the baguette has been in the oven for 20 minutes, pull out and brush on the rest of the glaze evenly. When you are done applying the glaze, put the baguette in the oven for another ten minutes.
