This is taken from allrecipes.com (as well as the picture). I tried it, loved it, and want it where I can find it easily. Quinoa is a super food. It is very high in protein, fiber, iron and contains essential amino acids. Always make sure you rinse it before cooking, especially if you buy organic. It has a coating on it to protect it from birds eating it and has a bitter taste but can be easily rinsed off. Use quinoa as a side dish or replace rice with it.
1 tablespoon butter
1 cup uncooked quinoa
2 cups chicken broth
2 teaspoons chopped garlic
2 tablespoons chopped parsley
1/2 tablespoon chopped thyme
1/4 teaspoon salt
1 small onion, finely chopped
1 dash fresh lemon juice
Melt butter in a saucepan over medium heat. Add onion and garlic and simmer until soft. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15-20 minutes, or until quinoa is tender.
In a bowl, toss quinoa together with parsley, thyme, and salt. Sprinkle with lemon juice, and serve.
