Peanut Butter - Oatmeal Cookies

Trevor always requests I make 90 of these cookies. I like the oatmeal in them, not only for a little "healthy" boost but they also make the cookie thicker and chewier.
1/2 c. peanut butter
1/2 c. butter, softened
1/2 c. sugar
1/2 c. packed brown sugar
2 egg whites
1/2 tsp. vanilla extract
1 c. all-purpose flour
1/2 tsp. baking soda
2 c. oats (quick or regular)
1. Preheat oven to 375 degrees. Combine peanut butter, butter, sugar and brown sugar in a bowl. Beat with an electric mixer until light and fluffy, about 3 minutes. Beat in egg whites and vanilla.
2. Mix flour and baking soda. Add to bowl; mix well. Stir in oats.
3. Drop dough by rounded teaspoonfuls onto 2 ungreased baking sheets, 2 inches apart.
4. Flatten cookies slightly with a fork. Bake cookies for about 10 minutes; cool on baking sheets for 1 minute. Place on wire racks to cool completely.
